Verdict?

OK – this is a pretty easy call. Both phones are nearly IDENTICAL except for the size of their display. But the display tech itself, as well as the front and rear cameras, the processors, and even the storage sizes are the same.

If you like giant phablet phones, go with the iPhone 11 Pro Max. If you like a phone that you can (just barely) use with one hand, get the iPhone 11 Pro.
